Food is such a tough thing for most women–myself included! A high-nutrient diet is essential to maintain high levels of energy, youthful skin, and a good sense of self-esteem. But when I want food…especially comfort food…especially ooey-gooey mac and cheese…I gotta have it!
To indulge my mac and cheese cravings without sacrificing nutrition, I came up with this recipe that replaces white pasta (which is mostly empty calories) with cauliflower. Cauliflower is high in cancer-fighting sulforaphanes, choline, antioxidants, phytonutrients, and so much more! It’s also high in Vitamin C, which is essential for maintaining your skin’s elasticity as you age. Cauliflower Mac and Cheese
Salt, as needed
1 large head cauliflower, cut into small florets
Vegetable oil spray (I like macadamia nut oil spray)
1 cup half and half
2 oz cream cheese, cut into small pieces (I used Neufield cream cheese)
1 ½ teaspoons Dijon Mustard
2 cups shredded sharp cheddar cheese
½ teaspoon freshly ground black pepper
1/2 teaspoon crushed garlic
First, preheat your oven to 375 degrees F.
Next, bring a large pot of water to boil. Season the water with a large pinch of salt.
Spray an 8″ x 8″ casserole dish with macadamia nut oil spray.
Cook the cauliflower in the boiling water until crisp and tender, about 5 minutes. Drain well. Transfer the cauliflower to the baking dish and set aside.
Bring the half and half to a simmer in a small saucepan, then whisk in the cream cheese and mustard until smooth. Stir in 1 1/2 cups of the cheese, salt, pepper and garlic and whisk just until the cheese melts, about 1 to 2 minutes. Remove from heat, pour over the cauliflower, and stir to combine. Top with the remaining ½ cup cheese and bake until browned and bubbly hot, about 15 minutes. Serve.
